Step by step

  1. Divide the beef into four loose 4-ounce balls. Heat a cast-iron skillet over high heat and have the buns and toppings ready.
  2. Place the beef in the pan, smash into thin patties and season with salt. Cook until a brown crust forms, then flip.
  3. Brush each patty with 1 teaspoon Spicy Tokyo and add cheese. Cook the ground beef to 160°F; the thin patties cook quickly, but timing alone is not a safety check.
  4. Mix a little fresh Spicy Tokyo into the mayonnaise. Stack two patties per bun with lettuce, pickles and the sauce mayonnaise.
